Baked chicken

My kids really love meat. They could eat chicken just about every day, which is great because chicken is super affordable and there’s so many combinations of flavors and dishes.

One of our favorite dinners is this Baked chicken recipe, developed for it’s super crispy skin. I love a good crunch when i’m biting into a chicken thigh.

This chicken is great because you can buy a big package and make half one night and half another. Just put the marinated chicken into a container or ziplock bag, the flavors will soak into the chicken until you’re ready to cook.

6 Chicken thighs, bone in & skin on
1/4 cup Vegetable oil
2 Tbs Garlic powder
2 Tbs Onion powder
1 Tbs smoked paprika
1 Tbs Oregano
1 Tbs Basil
1 Tbs Salt

Put all the ingredients into a ziplock bag and massage spices into the chicken thighs

Marinate for at least 30min

I like to set it out on the counter to marinate while I’m getting the rest of dinner prepped. Sometimes when I’m really on a roll I marinate a day ahead.

Tip: if you let the chicken come to room temperature before putting in the oven, the chicken will be more moist on the inside and crispier on the outside.

Place marinated chicken thighs on a greased pan, skin side down.

Bake in a preheated oven of 375 for 30min. Flip the chicken so that it’s skin side up and bake for another 10-15 min.

And there you have it! Super crispy chicken you’ll love, your kids will love and it’s also super easy to put together. We keep these chicken thighs in our regular dinner rotation.
